Expert insights on selecting qualified food-grade cookware, maintenance protocols, and corrosion resistance.
Domestic and commercial stainless steel tableware can generally be divided into 430, 18-8, and 18-10 (304 series) grades. 430 stainless steel contains over 12% chromium to resist natural oxidation. 18-8 and 18-10 contain iron plus 18% chromium and 8% to 10% nickel. Chromium provides corrosion immunity, while nickel delivers resilience against acids and mechanical durability.
Magnetic & Chemical Test: Nickel is an anti-magnetic material. High-quality 18/10 cookware features non-magnetic or weak-magnetic bowl construction with an induction-magnetic heavy base pressed beneath.
Under neutral and alkaline conditions, the chromium content forms a microscopic self-healing passivation oxide film. However, extended exposure to active halogen ions (e.g. wet salt left stagnant overnight) can disrupt this film. Always rinse and dry cookware after use.
First Use Tip: Boil fresh water in the vessel for 30 minutes, soak, and wipe with a thin layer of cooking oil to protect the inner surface.
1. Vinegar Method: Mix edible vinegar with water in a 1:10 ratio, boil for 45 minutes, allow to cool, and rinse gently.
2. Fresh Lemon Slices: Boil two sliced lemons inside the kettle for 10 minutes; the citric acid loosens calcium deposits while refreshing the aroma.
3. Sweet Potato Boiling: Boiling sweet potato in a new kettle leaves an organic micro-barrier that delays calcium carbonate scale adhesion.
